剝皮辣椒醉雞捲佐皮蛋油醋沙拉藜麥飯

Peeled chili-goji berry drunken chicken roll with century egg salad and quinoa rice

雞腿肉一片180-200g

 

✓枸杞10-15顆

 

✓2條剝皮辣椒

 

✓皮蛋一顆

 

✓沙拉葉適量

 

✓調味料:鹽胡椒一匙、米酒一大匙、紹興酒一匙、黑麻油一匙、油醋醬一小匙。

 

✓棉繩一條

 

✓熟藜麥飯半碗

 

 

A home-made peeled chili drunken chicken roll with refreshing taste! It is as delicious as those sold in a restaurant. I love the drunken chicken style!

.

Ingredients: chicken thigh 180-200g, appropriate amount of goji berries, and 2 slices of peeled chil, 1 century egg, some salad leavesi. Seasoning: 1tsp of salt and pepper, 1 tsp of shaohsing wine, sesame oil and 1tbsp of rice wine. And appropriate length of cotton rope. ½ bowl of cooked quinoa rice.

雞腿肉去骨斷筋絡、去掉多餘雞皮&脂肪(仍保留大部分皮) 隔著保鮮膜,將雞腿拍扁讓厚度均勻,以鹽、胡椒、米酒按摩均勻。

枸杞用冷水浸泡,待至泡軟後,加入一匙枸杞、2條剝皮辣椒,用棉繩綑綁起來變成圓筒狀,淋上紹興酒、黑麻油各一小匙,以鋁箔紙包起,冷藏醃製1-2小時以上。

 

3.

入電鍋外鍋一碗水,蒸約40分鐘,冷卻後,打開鋁箔紙放入冰箱冷藏。備註:記得保留雞汁,冰過後會呈現雞凍狀!

擺盤,搭配皮蛋油醋沙拉、半碗藜麥飯,完成超有創意的美味健康碗 。

Remove the bone, tendon, extra skin and fat from chicken thigh (keep most of the skin). Place a piece of plastic wrap on the chicken thigh and pound the chicken thigh to an even thickness. Then marinate the chicken with salt, pepper and rice wine.

Soak the goji berries with water until soft. Add the goji berries and peeled chili onto the flattened chicken. Roll up the chicken and tie it up with the cotton rope. Drizzle 1 tsp of shaohsing wine and sesame oil on the chicken roll, and wrap it in foil. Fridge it for at least 1-2 hours. 

 

3.

Steam the chicken roll for approximately 40 min. After cooling, open the foil and put it in the fridge. Remark: remember to keep the chicken stock, it will become cold chicken jelly after it is kept in a fridge for a few hours

4.

Plating. Serve it with century egg salad and half a bowl of quinoa rice.
